For a while there, I stopped eating you. I thought I could move on and start a life without you, but breakfast just wasn’t the same. There was no one there to greet me in the morning, give me energy to start my day, help manage my hunger, or provide me with a much needed protein kick. Trust me, I tried to replace you, but nothing quite fit. I just missed seeing your sunny little face on my plate every morning. Fried, boiled, scrambled, sunny-side up... I could always count on you for a hearty and wholesome meal. Truth is, Egg, I need you back in my life.
Peeps, it’s National Egg Month! We all know that “Breakfast is the most important meal of the day”, so why not start off with the almighty egg?! When eaten in moderation, eggs offer so many nutrients and health benefits. No, unfortunately, this does not apply to chocolate eggs. I know the thought of eggs may make y’all green, but I’m very confident that these recipes will convert you into the ultimate egg connoisseurs! Baked Egg Boats - Feast your eyes on this puppy! Excuse me while I polish off a whole loaf on my very own. I am just egg-static! Sourdough bread filled with eggs, grated gruyere cheese, pancetta (oh how I love thee), and heavy cream... is it breakfast time yet?
Supersonic Breakfast Burrito - Must. Run. To. Store. Need. Ingredients. Now. Yes, this deserves an “Ay Dios Mio!” This breakfast burrito will put you over the edge! The tater tots, jalapeno slices, and sausage combine to create a mouthwatering masterpiece!
Fried Egg Sandwich - This gourmet egg sandwich is absolutely divine! Oozing bacon grease, runny yolk, and crumbly blue cheese between two pieces of ciabatta bread. Where, oh, where have you been all my life? I’ll have a serving for breakfast, lunch, and dinner, thank you.
Savory Waffles - I am a sugar fiend. I like my waffles drenched in maple syrup and topped with whipped cream. Well, a dozen sugar highs and crashes later, I decided to give these cornmeal and chive waffles with salsa and eggs a try. They sure put my sugar demons to rest!

A Two Bite Breakfast - I’m a certifiable bacon and eggs nut! Especially when they are baked in a bread bowl and come in bite-size form, they drive me bonkers! Sure, I’ll have an extra serving or 12. No rocket science here! Simple yet so scrumdiddlyumptious.
