Hey Young Hollywood, I'm Cat Cora and I'm here to teach Jamie, who's a single mother of three, how to cook a healthy meal on a budget. Come on.

I'm about to surprise this family. Jamie?

Hi.

Oh, hi Cat Cora, it's so nice to meet you.

Hi you? Good. Well, I am here. I heard you're a single mom of three.

Jamie

Yes.

Cat Cora

Busy, all over the place, on a budget. I'm here to teach you how to cook a healthy meal on a budget.

Jamie

Oh, I'm excited. I can't wait.

So, who's this little girl?

Jamie

This is Eliana Love. She's my youngest.

Cat Cora

Oh my gosh. Now, what about these handsome young guys over here?

Jamie

This is uh my youngest son Leo.

Cat Cora

Hey Leo! What's up, buddy? All right. You guys ready to eat some good chow today?

Yes.

Cat Cora

Cool. Okay, Jamie, so, show me where your kitchen is. I'm gonna rummage through everything. We'll get started, we'll prep some things up and then we'll get cooking.

Jamie

Okay, perfect.

Cat Cora

All right. So, what I'm gonna do here is this is just a classic herb-roasted chicken. What I'm gonna do first is um I'll tell you a little bit about the other dishes I'm gonna do and then we're gonna go straight into the chicken. So, the second dish, I love to do the strawberry arugula um salad with a little avocado and blue cheese. It's a really great summer salad and I also wanted to give it kind of a sweeter, kind of salad for the kids. Something that they might like. And then last but not least, some chocolate. So, what I'm doing is I'm showing you how to make my chocolate Boudino. And Boudino is Italian for pudding cake. Kind of a molten, yummy cake. And this takes 12 minutes to bake. So, easy to do. So, let's get right into the chicken. So, what I'm gonna do first, I'm gonna give it some seasoning. This is any herbs that you want to chop up. If you've got three or four herbs that are sitting in your refrigerator you need to use up, or maybe you have a little window garden or something outside that you can use up, that's perfect. Really super simple, a squeeze of lemon on it. Once I squeeze the lemon, I take the rest of this lemon and I kind of put it in the cavity of the chicken just to give it a little inside lemon uh fusion. Here, look at the chicken. What do you think? How is it?

See? Like the baby whisperer. All right, here we go. 45 minutes and this baby will be ready to eat. Okay, Jamie, so, I just put the chicken in and do you have any questions about that? I know it seemed like it was fast.

Jamie

That was very fast actually. It takes me a lot longer to season. I I saw that you had put the olive oil on. Does that help the seasoning to soak in?

Cat Cora

Well, the olive oil does several things. One, it is to help, you know, all the ingredients stick to the chicken. But it also, you know, oil is also a heat conductor. So when you put it into the oven, it actually helps start that heat and start that cooking process pretty quickly.

Jamie

Okay, perfect, because you know, I have three kids. We're always on a time. So how we get home, it's like six, seven, eight, so and then I have the baby. And that's all.

Cat Cora

Right, you have her that I get it. Matter of fact, if you can even get some of that done in the morning, if you're going to work and you have a busy day, it gives it about eight hours to even soak in more and has is more flavorful. Plus it takes something off your plate at night.

Jamie

Oh.

Cat Cora

When you come home and you're busy. The next thing we're gonna do is we're gonna make the vinaigrette for the strawberry salad. Okay. Good olive oil, a little bit of garlic, a little bit of roasted shallot that I'm gonna chop up, white wine vinegar, some kind of light vinegar, whatever you have on hand or whatever you can find, a little bit of salt and pepper. So what I'm gonna do here again, super easy to make this vinaigrette.

Jamie

Cat Cora

I've got a great app that I'm gonna show you later. There's videos on there, it kind of shows you how to make things like a vinaigrette. Very simple things, but also great recipes.

Jamie

Okay, perfect.

Cat Cora

All right. And then what you can do is what I like to do especially when I'm going through all this effort to make a vinaigrette, is you might as well double or triple the batch. Because what you can do is you can actually put whatever's left into a jar. And that helps you out for the whole week. You don't have to make it again. So what we're gonna do now is we've got all the ingredients ready to mix the salad. So that's the easy part. Basically have some strawberries cut up, you have your arugula, cut up a little bit of avocado, which is really healthy and fresh for the boys. Especially for the baby too, and for you. And you know what? A great thing, this is a little tip for the baby, what we used to do when our kids were able to eat solid foods, we just take a a half of avocado, fresh avocado, and put a spoon in it. And they would eat that because it's so soft. And all those fats are so good for their brains.

Jamie

Okay, perfect.

Cat Cora

Just a little tip. That's a little extra tip for Young Hollywood there. This is a really easy dish to do. I've got three yolks here, I've got some whole eggs that I'm gonna put in, some soft butter. What I'm gonna end up doing is mixing these things together and I'm gonna melt my butter and my chocolate over a double boiler right here.

Jamie

Okay, perfect. And and how long does this whole process take?

Cat Cora

15 to 20 minutes for making the batter. But once it's made, it's 12 minutes to bake.

Jamie

Okay.

Cat Cora

Now, why don't we go over here while that's doing? We'll melt that a little bit more. It's literally only about three tablespoons of flour. That's all that's holding it together. Now what we're gonna do is we're gonna take that off now. What we're gonna do here, this is gonna be very, very critical. So everybody pay attention. This is called tempering. So what I have here is I have a cold item here, my egg mixture, and I have a hot item with my chocolate and butter mixture. We're gonna bring these two together and we're gonna make it one temperature. So what I want you to do is I want you to just pour this in, drizzle it in really slowly and I'm gonna whisk. And then leave a little bit for the kids. Somebody's got to lick the bowl.

Jamie

Yes.

Cat Cora

There you go. Quick and easy.

Jamie

Yes.

Cat Cora

That was what? About 20 minutes.

Jamie

Yeah that that sure was. That was easy.

Cat Cora

All right. High five, mama, and the baby's asleep. Yeah, score. So what do we sit down?

Jamie

Okay, perfect.

All right, kids, come on. It's time to eat.

Going for the same piece of chicken when there's ten pieces on the plate. Yeah, this is really good and What do you think? Is this something you you can make this? This seems easy for you. Well, I do have an app and the beautiful thing about this is I have three.

Oh. May I please have the hot sauce?

Cat Cora

You want some hot sauce? Of course. I'm not offended. Matter of fact, keep some for me. Don't use it all. But no, you can go in here and the great thing about this is you can take all the recipes that you see and you can actually, it'll make a meal for you. So it'll put together like the strawberry salad needs to go with the herb chicken.

Jamie

Okay.

Cat Cora

So it'll create the meal for you, which takes a lot of work out of for moms. And it'll convert that if you wanted to take, for instance, you're having your four of you are hanging out, you can actually say, well I got six people now, or seven people now, can you convert the menu. And it'll actually change the amounts of portions that you need and it'll give you a grocery list.

Jamie

Okay, perfect.

All right, how's the hot sauce?

Good.

Good. Is it good? Is the hot sauce good with the chicken?

Child

Yes.
