1. Grab a hand mixer and combine 1 cup of room temperature vegan butter, ½ cup of organic white sugar, and ½ cup of organic light brown sugar in a large bowl until you get a smooth and fluffy texture.
2. Mix in ⅓ cup of organic gluten-free molasses and 1 lightly beaten egg until combined.
3. Grab a separate bowl for mixing the dry ingredients, which are as follows: 2 ¼ cups of gluten-free all-purpose flour, 1 ½ teaspoons of organic baking soda, ½ teaspoon of baking powder, 2 teaspoons of organic ground ginger, ½ teaspoon of organic ground clove, ½ teaspoon of organic ground cinnamon, ½ teaspoon of organic ground cardamom, ½ teaspoon of ground white pepper, ½ teaspoon of organic salt, and 1 cup of organic ginger nibs. 3. Cut open a chai tea packet and add it to the mixture.

5. Refrigerate the dough for 1 hour.
