My name is Michael Sanchez. I'm the owner of Mama's in Washington Square.
Okay, first of all, I feel very guilty because I see people outside staring at me, waiting in line and they're looking at my food and they're looking at me like they might stop me with my fork.
Ignore the daggers. We open at 8:00. Now, the lines in the busy time of the year, they'll be a half a block long or longer on the weekends. People start lining up before seven. The location's really great. This beautiful bright sunny corner with the park across the street. It's very conducive to breakfast.
Okay, so Benedict is my go-to breakfast.
Well, this is a prosciutto tomato Benedict. The prosciutto, we just warm it to retain the sweetness. So the sweetness of the prosciutto against the tomato is a nice pairing. I put up about 70 or 80 plants every year. There is nothing like a tomato that was just picked.
Well, I'm going to give it a shot. I can't wait. You see that egg break open? That looks perfect right there.
